Stephe's gluten-free sandwich bread
Flour mix
Enough for 2.4 batches. See my ingredients.
- 1 bag quinoa flour
- 2 bag brown rice flour
- 3 bag sorghum flour
- 1 C Sugar
- 60 ml xanthan gum
Sandwich bread
Fills 2 metal non-stick pans 10.5 in x 5.5 in x 2 in; dough rises
to top of pans.
This dough has the consistency of quick bread dough; it doesn't need
kneading.
- Preheat oven to 170
- In mixer bowl, with cake beater:
- 2 C water, microwave 3 min, 1/2 C fresh ground flax seed
- 8 Tbl margarine
- 25 ml yeast
- 4 cup warm water - uwave 1 min / 2 cup
- 10 cup flour mix
- Mix at 4 for 6 minutes
- grease non-stick pans with margarine
- Pour dough into loaf pans
- Rise in oven at 170 for 15 minutes
- Bake at 350 for 55 minutes including preheat
- cool 15 min to avoid falling apart if sticking
- Turn out of pans with spatula
- Cool 45 min
- Bag (I cut loaves in half to fit in gallon storage bags)
