Stephe's gluten-free corn bread
Flour mix
Enough for 4 batches. See my ingredients.
- 1 bag brown rice flour
- 1 bag sorghum flour
- 12 C corn meal
- 2 C sugar
- 40 ml baking powder
- 20 ml xanthan gum
Corn bread
- preheat oven 375 F
- grease glass 9 x 9 or 8 x 11 pan with margarine
- 3/4 C water, 60 seconds microwave
- 45 ml (3 T) flax, fresh ground
- Mix flax in hot water
- 4 C flour mix
- 2 C full fat milk
- mix all, pour into glass pan
- bake 55 min
- cool 1 hr 15 min
- cut into 16 pieces
