Stephe's gluten-free biscuits
Flour mix
Enough for 4 batches. See my ingredients.
- 3 bags brown rice flour
- 3 bags sorghum flour
- 1 bag quinoa flour
- 300 ml baking powder
- 200 ml sugar
- 35 ml salt
- 70 ml xanthan gum
Biscuits
- preheat oven 350 F
- 6 C flour mix
- 1 C butter, cubed
- in mixer, mix flower, butter until mostly blended; 2 minutes.
- 1.5 C full fat lactose-free milk
- 45 ml apple cider, stirred into milk
- 1/2 C water, 30 seconds microwave
- 40 ml flax seed, fresh ground
- Mix flax in hot water
- Stir flax mixture into milk
- Add milk mixture to mixer, mix until blended, about 30 seconds.
- Mix by hand in mixer bowl to ensure all flour is included.
- Turn out onto floured surface, press into a large square, about 2 inches thick
- Fold in half, press again; repeat 8 times.
- Roll to 1 inch thick
- Cut into squares of desired size (I use 1" by 1/2"), place in nonstick pan
- bake 20 min
- cool 10 min
